Here's my raw and healthy take on the classic lovely warming carrot and coriander soup. It's perfect for those chilly autumn and winter months although I enjoy it no matter what the time of year.
Chop all the veg finely and add to a high-speed blender, leave on until reached the desired temperature, pour a glass of hot water into the mix to heat the soup through if needed (especially if you do not have a high-speed blender).
If you are lucky enough to have a high speed blender just leave it on for 5 mins and voila.... instant hot raw soup.
Pour the soup in pre heated bowls to retain the heat of your warming healthy soup.
