This is a fabulous alternative to sugar and doesn’t push your blood sugar levels up, so it’s perfect for diabetics. It also contains fewer calories than sugar so for me is a firm favourite when sweetening smoothies, raw cookies, breakfast cereal, I even add it to my raw ice creams.
It also only takes a few minutes to make, so totally not labour intensive. Date paste is an absolute staple in my fridge and it stays fresh for 4 week.
Pour the rehydrated dates and the water into a food processor or high speed blender and mix until you have a smooth paste consistence.
Transfer to a glass jar and keep refrigerated for up to 3 week, this paste can be used to sweeten raw cookies, cakes, granola, ice-cream and many raw food recipes, it is also a great alternative to proceeds sugar.
